This French vinaigrette will let your green salad shine and many other culinary uses, too!
1/4 cup white wine vinegar (choose good quality)
2 teaspoons Dijon mustard
2 teaspoons Herbes de Provence
1 teaspoon granulated sugar
1/2 teaspoon salt, or to taste
1/4 teaspoon white pepper, or to taste
1/2 cup extra virgin olive oil
In a medium mixing bowl, whisk together all the ingredients except the olive oil.
Very slowly drizzle the olive oil in, whisking vigorously.
Transfer to a jar with a tight seal. Shake before each use.
